Main Responsibilities :-

  • Punctual
  • Look professional & abide by H&J grooming standards
  • Check daily logbook: Maintenance, Messages from previous shift, Updates on item presentation…
  • Assign the section to kitchen pastry members
  • Check that all equipment is on and is functioning normally by testing
  • Coordinate with kitchen CDP on 86 items which he will relay to the FOH in charge
  • Suggest upselling items with the coordination of the kitchen CDP which he will relay to the FOH in charge
  • Ensure that the quality and standards are maintained by all pastry commis in all aspects of pastry preparation and service on other section
  • Check on pastry/desserts before delivering: Quality, Quantity, Portion, Presentation, Special modifications…
  • Keep the pastry area always clean: Sanitize pastry surface area, throw any unwanted leftovers, Clean as you go…
  • Always check the temperature of the pastry area
  • Delegate cleaning tasks for section when AM shift is over
  • Delegate labelling and filling stations tasks when AM shift is over
  • Proper handover from shift to shift
  • Assisting during the service in the production of the menu items according to orders and following standards recipes
  • Spot-checks
  • Place orders
  • Make sure all equipment is turned off
  • Prepare weekly reports & send it to the Kitchen Chef
  • Coordinate with Kitchen Chef to set monthly general meeting points/topics
  • Writing on the daily logbook: Maintenance, Updates on items prep, Messages for the day after
  • Filing of wastage and breakage reports
  • Delivering all reports/invoices to the Kitchen Chef to send to the purchasing department
  • Meticulous in follow-up documentation
